Punkin’ Pie and Reasons Why!

Ok!  New announcement!  I know we posted a recipe in the last blog, but with the Holidays just around the corner….like next week:)….I wanted to share a favorite recipe from the kitchen of Southern Raised!  Southern Raised takes more time off this time of the year and thought it would be fun to post some of what we are up to these days at home:):)  The following pics and ingredients will show y’all just how to make a punkin’ pie straight from the punkin’ patch to the kitchen!!!:)  Yay!  This is sooo much fun and the yummy  results are even “funner:)”  ……..hmmm…….I mean “more fun”!!!!:)  Y’all get the idea!  I am gonna show ya lots of pics taking you step by step.  This is an awesome idea to get the whole entire family involved!  Little ones and children can help pick out the pumpkin and maybe get their little hands inside of it( after an “older” individual cuts it open) and help gut out all the ooey gooey seeds and fiber!:)  This is sure to be a memory maker and it is a tradition at our home…..actually the only way we make pumpkin pie now!  So……..here we go!!!

Inside Scoop!

The first step is finding a fairly small pumpkin, a small sugar pumpkin is best.  Then you need to wash it off.  Rub it dry and find you a good sharp serrated cutting knife…..be sure and be careful on this part!!:)

……………………………..Ok:)…………remember if brothers get involved, specify the instrument used for cutting!!!!!!………Just saying!!!!:):)……………………………………. Then cut the pumpkin in half and remove the stem.  If you like, you could just cut the whole top off and take care of the stem that way…..whatever you like!:)

After it is cut open you will discover what that little orange gem contains!!…….lots of stringy fiber and seeds that need cleaning out!……….But, these are the little jewels that will one day be your next pumpkin!……..At this point you can keep the seeds and follow a guide on how to save and store them for the future!………..I know many folks will save the seeds and roast them!  There are tons of recipes out there for that too!…………

Then you are going to place the pumpkin face down on a baking sheet.

Oven Ready!

Ok……….so now you head off to the oven with your pumpkin!  Heat your oven to 350 degrees and bake for 1 hour or until very tender when pierced.  Then you just spoon out the soft pulp!…….here is the recipe for the pumpkin pie and I am including a homemade pie crust recipe!!  If you are going to make a pumpkin pie from scratch……go all the way!!!  Make a homemade crust too!!!!

 

      Homemade Pumpkin Pie

2 cups pumpkin

1 t ground cinnamon

1/2 t ground ginger

1/2 t ground nutmeg

1/4 t ground cloves

1/2 t salt

Whisk these  ingredients over medium.

1 cup dark brown sugar

Now add sugar to the mix over medium after the pumpkin mix begins to cook.

3/4 cup whole milk

3/4 cup heavy cream

Add  milk and cream to mix and whisk over medium.  When the mixture begins to bubble and splutter you can remove from heat.

3 large eggs

Now it is time to get your blender out!  Place the 3 eggs in your blender and blend about 2 seconds, just so it is nice and creamy consistency.

Take your pumpkin mixture and while your blender is going, pour the mix through the feeder hole in blender cap.  This will help out with breaking down any fibers and making your mix as smooth as possible!

Now at this point, you would want one of those homemade pie crusts ready to roll out!  So let me give you that recipe!

Nonny’s Pie Crust

(this is the pie crust recipe my grandmother uses….hence the name:):)

1 t salt

2 cups flour

1 cup Crisco ( I use real butter)

1/2 cup ice water

Sift dry ingredients.  Take Crisco or butter and cut into dry ingredients till course meal and pour in ice water a tablespoon at a time.

With fork, get all it all stirred up in a ball.  Put your hands in flour and form dough into a ball, cover and put in ice box for 30 min.

Take out and put on a floured surface.  Do not turnover.  Put in your favorite pie plate!….if you are doing a cream or ice box pie, at this point you would bake it for 25 minutes at 400 degrees, but we are doing pumpkin so you can disregard that for now!!!

This will give you 2 crusts.

Moving right along!:)  Isn’t this fun??!!  Now we take our baked pumpkin pulp and place in mixer or food processor.  Blend this until it is fairly smooth.

Now we are going to take the first 6 ingredients of our recipe and place in a saucepan over medium heat.

Now, be sure you are referring to the recipe above for specifics!  Now add your sugar……..now we have sugar and spice and everything nice!!!:)  Allow this to cook a bit……………………….

Now we shall add the cream and milk…………I had on hand some  creamy milk from a local farm…..so for my heavy cream I just skimmed the top of my milk!

If you refer to the recipe at this point you will see that we add cream and milk to our mix on the stove and let it bubble.

After this bubbles remove from heat and place 3 eggs in your blender and blend about 2 seconds.  We will now( with blender going) pour pie filling in the hole that is on the top of your blender.  Blend until smooth and creamy.

Now is the time to pull out that pie crust from the ice box!  Roll it out!

Ready….. set…….. roll!

……………………………now bake this at 400 degrees.  The recipe says for about 25 min..until pie is jiggly…but I had to go longer.  You can insert a knife in the center of pie and if it comes out clean you are good to go!

 

Soooo……………..now that you have it ready, be sure and put a pot of coffee on to go with it!:):)……………..Hmmmm:)  Wonder if I could find someone to taste test this??:)

Oh! And do not forget to whip up  some sweet cream to go with it!!! You cannot have pumpkin pie without sweet cream!!!!:)

Ok:)……so back to the title of this blog…….I gave you the recipe for pumpkin pie,but you must come up with the reasons why!!!:)  Reasons why this is the only way to go for the most awesome wonderfulness ever!!!!  Even if it is a little more work and fun!!!  Well……you get the idea:)……………….and I really imagine once you bite into it…………….well…………..lets say I am pretty sure you will have all the reasons why…………….only you can’t say it, because your mouth is full of pumpkin pie:):):)…………………..Speechless, Lindsay
